Welcome! I am starting this page to share the recipes I cook in my kitchen that I already use and ones that I have found on the web and tried. I love looking at other people's cooking blogs for ideas to use in my own kitchen. My favorite blogs are the ones with step-by-step pictures and directions like Southern Plate, created and run by Christy Jordan. Her humor, stories, and recipes are great! I find that when I talk to people about cooking, many are intimidated by recipes. I always hear others say that they want cookbooks and recipes with pictures. My goal for this page is to share easy and delicious recipes that anyone can make. Believe me, I am no chef. So, I figure if I can prepare and cook these recipes, then you can too!

Tailgating Wing Sauces

This posting is a 3-for-1 deal! LOVE, LOVE, LOVE these homemade wing sauces. Football season is a big deal in my house. Once the season starts, it seems like there is a game on our TV every night. My husband buys Duke football tickets every year. He is known for having a great tailgating setup. We actually have a van that is devoted to tailgating!

Even though I am not a Duke fan, I have to admit that I have a great time tailgating and going to the games. We like to plan what we are going to make that day, and these wings are always a hit.

NC BBQ SAUCE:

 You will need: sugar, ketchup, red wine vinegar, red chili flakes, adobo sauce, dry mustard, and onion powder.
 Start with ¼ cup of ketchup
 Add ½ cup of red wine vinegar
 Add ¼ teaspoon red chili flakes
 This is the adobo sauce. You can find it in the Mexican section of your grocery store. It is packaged as "Chipotle Peppers in Adobo Sauce". We don't need the peppers for this recipe, just the sauce.
 Dip your measuring spoon down into the can so that you only get the sauce and not the peppers.
  Add 1 Tablespoon of adobo sauce to your mixture,
 1 teaspoon of dry mustard,
 2 teaspoons of garlic powder,
 and 1 teaspoon of sugar.
Lastly, whisk that all together until it is well blended.


TAILGATING ASIAN SAUCE:
 You will need: Soy sauce, honey, sesame oil, chili garlic paste, lime juice, cumin, garlic powder, a lemon, a lime, and fresh ginger
 Start with 2 Tablespoons of soy sauce (I am using low-sodium).
 You will need 2 teaspoons of lime zest. You will want to scrape your zester across the entire surface of your lime.
 Add ¼ cup of honey.
Add 3 Tablespoons of lime juice. I got as much fresh juice as I could from the lime I had just zested but had to add more from my bottle of lime juice.
Squeeze ¼ cup of fresh orange juice from your orange. You should be able to get enough from half of the orange.
Grate 1 Tablespoon  of fresh ginger into your mixture.
Add  1 teaspoon of chili garlic paste,
½ teaspoon of sesame oil,
½ teaspoon of cumin,
and ½ teaspoon of garlic powder.
 Whisk all the ingredients together.

TEQUILA LIME SAUCE:
You will need: lime juice, tequila (any brand), agave syrup, adobo sauce, cumin, a lime, and salt & pepper 
 Start with ½ cup of lime juice and ¼ cup of tequila.
 Add 1 Tablespoon of agave syrup.
Add 1 teaspoon of lime zest (you will need a zester to do this).
 Add 1 teaspoon of ground cumin,
 1 teaspoon of adobo sauce (see NC BBQ recipe about this),
 ½ Tablespoon of freshly ground pepper, and ½ teaspoon of salt.
 Whisk everything together, and it is ready.

Recipes-
NC BBQ SAUCE:
  • 1/4 cup ketchup
  • 1/2 cup red wine vinegar
  • 1/4 teaspoon red chili flakes
  • 1 tablespoon adobo sauce
  • 1 teaspoon dry mustard
  • 2 teaspoons granulated garlic
  • 1 teaspoon sugar
Combine all ingredients and mix well.

TAILGATING ASIAN SAUCE:
  • 2 tablespoons soy sauce
  • 1/4 cup honey
  • 2 teaspoons lime zest
  • 3 tablespoons lime juice, from 1 lime
  • 1/4 cup orange juice, from 1/2 orange
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon chili garlic paste
  • 1/2 teaspoon sesame oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon granulated garlic 
Combine all ingredients and mix well. 

TEQUILA LIME SAUCE:
  • 1/2 cup lime juice
  • 1/4 cup tequila
  • 1 tablespoon agave syrup, sometimes called nectar
  • 1 teaspoon lime zest
  • 1 teaspoon ground cumin
  • 1 teaspoon adobo sauce
  • 1/2 tablespoon freshly cracked pepper
  • 1/2 teaspoon salt
Combine all ingredients and mix well. 

Cook the chicken wings and then toss in your sauce of choice! Mmmmm!
